Pork Belly Burnt Ends
If you’ve never had pork belly burnt ends, you’re in for an awesome treat! They don’t call these “Bacon Candy” for nothing!
Here’s what you need:
One 3-5lb pork belly
Bo B Q Pork Rub
Apple spray (Apple juice, Water, Apple cider vinegar)
Your favorite Barbecue sauce
Brown sugar
Wire basket or rack
Aluminum tray
Let’s get started by setting up your smoker to 250 degrees using applewood.
While the smoker warms up, score the fat side of the pork belly in a 1 inch, crisscross pattern and then flip & cut the pork belly into 1 ½” square chunks.
Next, let’s coat and toss (heavily) in Bo B Q Pork Rub and then place pieces with the fat side up in a wire basket/rack to prevent the ends from falling through the grill grates.
Let the ends sit for about 15-20 minutes before placing in the smoker.
Next, let’s head out to the grill and smoke the ends about 2 1/2 hours or until meat reads 195 degrees internal. Spray ends with an apple juice/cider vinegar solution every 20-30 minutes after the first hour to keep meat moist (I recommend 1C apple juice, 1C water and 1/4C apple cider vinegar in a spray bottle).
Once the meat reaches 195 degrees, remove and place the burnt ends into an aluminum pan and toss in your favorite BBQ sauce (JUST ENOUGH TO COAT, we don’t want them swimming or simmering in the sauce!).
Sprinkle on some brown sugar and return to the smoker for another 20-30 minutes (or until the sauce sticks to the burnt ends).
Remove from the smoker, let them cool slightly and serve with your favorite sides (we prefer cornbread, baked beans and potato salad )!
