Bo B Q Chicken Pizza
Some of you may be thinking “ You can grill pizza?” Yes. And it’s delicious! This recipe is one of our favorites and makes 2 pizzas. Heres the things you will need:
A fork, pizza peel (or spatula), 2 packages of pizza dough mix, 2 chicken breasts, Bo B Q Chicken Rub, bbq sauce (we use honey bbq sauce), bacon bits (or cooked bacon), cilantro and shredded mozzarella cheese.
Let’s get started by seasoning the 2 chicken breasts with Bo B Q Chicken Rub and then grilling (Tip: For an even cook, without drying it out, pound the thick part of the breast until the breast is one thickness). Remove the chicken and set aside to slightly cool.
Next we need to thinly slice about half a red onion and finely chop about 1/2C of fresh cilantro. Place both in separate bowls and set aside.
Now we can’t have a pizza without dough. You can find great recipes online but at Bo B Q HQ, we just use the dry package mix you find at the local store. It works great and it’s cheap! Now, in this recipe, we are making 2 pizzas so grab 2 packages of dough mix. Make the dough according to the directions on the packages and set each aside.
While our dough is rising, grab that chicken and cut it up into your desired thickness (we aim for 1/4” thick slices). Place chicken in a ziplock bag with about a 1/4C of your favorite BBQ sauce and mix bag to coat the chicken.
Next, we need to preheat the grill for high heat and then roll out that dough. You want the dough to be about 1/4” thick. Place it on a well floured plate or platter and head over to the grill. Be sure to take a fork and pizza peel with you (a spatula will also work if you don’t have a peel).
Grilling the dough doesn’t take very long. It’s a matter of about 1-3 minutes depending on your grill. To grill the first side of our crust, place the dough directly on the hot grates. In a few seconds to a minute you should start to see the dough start to bubble. When this occurs, grab your fork and poke the dough and then start to lift the dough with the spatula to check on its doneness. We are looking for a golden brown color with some grill marks. When it reaches this point, remove the dough and place back on your plate or platter with the grilled side up.
Next it’s time to top the pizza. Start by basting the entire grilled side of the crust with a coat of bbq sauce. Next sprinkle the crust with an even dusting of Bo B Q Chicken Rub and a light sprinkle of mozzarella cheese. Next we add the chicken, bacon bits, red onion slices and finish with more mozzarella. Return the pizza to the grill and cook until the bottom is golden brown and the cheese has melted (about 1-4 minutes). Remove from the grill. Add the cilantro. Cut and serve.
