Chicken Kabobs
These chicken skewers are a favorite at Bo B Q HQ and are sure to be a hit at your pit!
Here’s what you need:
1/2 cup vegetable oil
1 cup honey
2/3 cup soy sauce
3 tsp Bo B Q Chicken Rub
4 boneless, skinless chicken breast halves - cut into 1 inch cubes
2 large red onions, cut into 1 inch pieces
4 medium red bell peppers, cut into 1 inch pieces �9 skewers
In a large bowl, whisk together oil, honey, soy sauce, and Chicken Rub.
Before adding chicken, reserve about half of the marinade to brush onto kabobs while cooking. Place the chicken, bell peppers and red onions in the bowl, and marinate in the refrigerator overnight or for at least 2 hours prior to cooking.
Preheat grill for direct cooking over medium heat.
Remove chicken and veggies from the marinade and thread alternately onto the skewers. Discard used marinate.
Place the skewers on lightly oiled grill grate. Cook for 12 to 15 minutes, until chicken juices run clear. Turning and brushing with reserved marinade every 2-3 minutes.
Serve skewers with your favorite sides such as corn on the cob seasoned with Bo B Q Chicken Rub!
