Pork Burgers
These burgers are an awesome alternative to the normal (and sometimes boring) hamburger!
Start with a large bowl and 2 slices white bread. With the crust removed, tear the bread into small pieces (about 1/2” in diameter). Next we want to add 4 Tbsp milk and begin to work the bread into a slightly chunky paste using a fork. Next add 3 Tbsp bbq sauce, 1 finely chopped shallot, 3 Tbsp bacon bits and 2 tsp Bo B Q Pork Rub. Combine ingredients with 3 lbs ground pork but try not to over work.
Next, prepare your grill for direct cooking over medium heat 350-375 degrees. (For more smoke flavor, cook on your smoker by setting it at 450°F).
Now it’s time to turn this bowl of great smelling meat into burger patties! Make a meatball a little bit smaller than the size of a baseball and flatten it out to about a 1/2 inch thick. Now take 2 fingers and put a small dent into the center (this will prevent your burger from turning into a ball again on the grill when the meat shrinks). Repeat this process about 11 more times and head out to that grill!
If grilling:
Grill the patties dent side down until browned (about 5 to 7 minutes). Flip and continue to grill until burgers register 150 degrees, (about another 5 to 7 minutes).
If smoking: Smoke the pork patties indirect dent side down for 4-5 minutes on each side. Move to direct to char it up a little and remove when the internal temperature reaches 150 degrees.
Serve burgers on toasted buns topped with BBQ sauce (and a spoon full of coleslaw for additional flavor) and don’t forget a side such as roasted potatoes or a salad! Enjoy!
