Beef Fatty
A beef fatty is an awesome, yet easy main dish to make for the family! Its like a smoky loaf of bacon cheese burger!
Heres what you need:
16 slices of bacon
1 1/2 pounds of ground beef
1/2 cup of shredded cheddar cheese
1/4 cup of ketchup and 2 tbsp of Bo B Q Steak Rub.
Directions:
Let’s start by preheating your smoker or grill to 250 degrees.
To start, you need to make the bacon weave, lay eight bacon strips, side by side, vertically. Horizontally, weave the top bacon strip through the vertical strips. For the remaining horizontal strips, pull back every other vertical bacon strip (see the picture above). Lay a bacon strip down up snug to the horizontal strips. Pull the vertical strips back down. Do the same thing again, but with the other vertical bacon strips. Do this for the rest of the bacon until you have a complete bacon weave. Next you want to roll or pat out the ground beef to the same size shape as the bacon weave.
Once this is done, bast the beef with the ketchup, sprinkle with Bo B Q Steak Rub, followed by the cheese leaving about a 1 inch gap along the outer edges.
Next you want to roll up the ground beef into a log, making sure to tuck in the sides to ensure there is no opening for the cheese to melt out of. Lay the beef log on the bacon weave and wrap the weave around the beef log.
Now let’s head out to the smoker and smoke the fatty for about 2 1/2 hours or whenever the internal temperature reaches 160F.
Remove from the smoker, cover with foil and let rest 10 minutes before serving.
