Bacon Bomb
If you’ve never had a bacon bomb, this is a real treat! It’s very similar to the beef fatty but an entirely different flavor!
Things you will need:
2lbs.of Thick Sliced Bacon
3-4lbs.of Ground Pork Sausage)
2-3 Tbsp Bo B Q Pork Rub
Barbecue Sauce
1/3C Green Bell Pepper (Chopped)
1/3C Red Bell Pepper (Chopped)
1/3C Yellow Onion (Chopped)
1/2C Shredded Cheddar Cheese
Set your smoker to 225 (Tip: a grill setup for indirect cooking works just as well). Let’s get started by flattening the Ground Pork into a 1 inch thick rectangle, roughly 6x10”. Next sprinkle the top with a thin layer of Bo B Q Pork Rub and baste with barbecue sauce. Now lets add the cut-up veggie’s and finish it off with the shredded cheese. Next we want to roll the pork into a loaf (narrow end to narrow end).
Here’s where the fun begins: we want to basket weave the bacon. Check out this video of you need some help:

Now place the pork loaf on the Bacon weave and roll it to adhere the bacon to the loaf, pushing the bacon down over the ends.
Now let’s head outside and put that Bacon Bomb in the smoker (or opposite the hot coals if using a grill). Cover and smoke 3-4 hours until the internal temp of the loaf reaches 160. Baste with sauce after the first hour and every 30 minutes after until it’s time to remove it. Remove and rest for 10 minutes before slicing.
Bacon Bombs are great with a side or on a sandwich!
