Smoked Chicken Wings
Smoked Wings disappear quickly at our pit but depending on what your favorite flavor of wing is, that can determine the type of wood to smoke with. For barbecue wings: Try applewood, pecan or for a heavy smoke flavor, hickory. For buffalo wings, try using applewood, cherrywood or for a bolder smoke flavor, try mesquite or even oak.
Now that we discussed what wood to use, here is the basics to smoking the perfect chicken wing.
Lets start by preheating your smoker to 225. If using a grill, set the grill up for indirect cooking (the wings will need to be opposite the hot coals).
Next, we want cut the wing sections into wingettes and drumettes and discard the tips. Now its time to season the wings. Place sections into a freezer bag and add desired amount of Bo B Q Chicken Rub, Bo B Q Cajun, Bo B Q Memphis or Bo B Q Steak Rub. Toss to coat and head out to that pit!
We want to smoke these wings for about 2 to 2 1/2 hours or until the they reach 165 degrees internally. Pull the wings off the smoker, toss in your favorite sauce, let rest about 5 minutes and enjoy!
