Bacon Wrapped Chicken Loaf
Tired of that boring traditional meatloaf but want to use Grandma’s old bread pan? Well if you do, this recipe is for you! It combines chicken, barbecue, cheese, onion and bell peppers all wrapped up in a beautiful , delicious layer of smoky bacon. This is a huge hit at Bo B Q HQ and it feeds a platoon! Give it a try, you won’t be disappointed!
Here’s what you need:
2 pkg Thick-cut Bacon
5 chicken breasts
Bo B Q Chicken Rub
1 red bell pepper
1 green bell pepper
1 red onion
10 Cheddar cheese slices
Directions:
Start by preheating your grill (or over) to 350 degrees.
While preheating, let’s cut the chicken as shown and season with Bo B Q Chicken Rub.
Next layer bacon in loaf pan all the way around the pan with it hanging over the sides. Be sure that the bacon over laps slightly so theres no gaps showing. We shouldn’t see any pan showing.
Add a single layer of chicken followed by a shot of bbq sauce.
Now let’s work on the next layers as follows: 5 slices of cheese, chicken, bbq sauce, green bell pepper, red onion, bbq sauce, red bell pepper, chicken, sauce, cheese and chicken and one last shot of bbq sauce.
Next, lay the bacon over the chicken to “seal” the loaf starting with the short ends then the long ends (tucking the excess down down into the pan).
Cover the loaf tightly with aluminum foil and place on the grill (opposite the hot coals) or in the oven. We’re gonna cook this covered for 1 hour.
After the hour has passed, we want to remove loaf from heat and CAREFULLY remove the foil and drain the bacon grease from the loaf pan.
Next, place a baking sheet, over the loaf and flip the loaf upside down on to the sheet.
Now lets baste the loaf with your favorite barbecue sauce and return the loaf to heat on the baking sheet for another 10 minutes. *If possible, do this step using a grill and a few applewood or cherrywood chunks to achieve that smoked flavor!).
After our 10 minutes is up, remove from heat and let rest 5 minutes before slicing.
